Today, with the increase in obesity, non-nutritive sweeteners called "NNS" have started to take more place in our eating habits. First of all, let's continue by correcting the misconceptions about Stevia! The general opinion is that sweeteners are divided into two as natural and synthetic. In reality, it is possible to talk about the use of synthetic or natural origin in industrial products, but it is useful to expand the word natural a little. For example, sugar cane is a natural sweet plant. If you chew the sugar cane with your teeth, you can taste the sugar, but we do not recommend it as it is known to harm your dental health . When refined sugar is obtained by processing the sugar cane in factories, White granulated sugar is obtained, which we all try to avoid. Here, we would like to open a parenthesis for Stevia and the perception that is tried to be created around it. (The stevia plant is a naturally sweet plant just like sugar cane. If you dry the leaves like tea leaves, then grind them in mechanical grinders and use the powder to sweeten your food, it is a natural sugar that feels about 40 times sweeter than granulated sugar (glucose) obtained from sugar cane. Another general opinion is that Stevia is more reliable than Sucralose and has fewer side effects. Let me clarify this notion as follows.
From the point of view of authority approvals, Stevia is an herb that was banned (prohibited) by both EFSA(C) and FDA and UK in the 1990s. The raw stem and leaves of the stevia plant still hold the FDA's GRAS certification of "Plants generally considered safe". is not. Only high purity industrial form of stevia purified by chemical extraction methods has GRAS certificate only as of 2008. What is sucralose?
Sucralose is actually a component obtained by chemically replacing Hydrogen atoms in galactose, known as milk sugar, with Chlorine atoms. In fact, it is a new ingredient obtained by combining the sugar obtained from milk in the process with Chlorine, which is also found naturally in plants such as lettuce and tomatoes.
When we examine sucralose in terms of authority approvals
Sucralose has GRAS certification, which Stevia does not have, by FDA, EFSA(C) and UK health authorities.
In the studies conducted for sucralose, it has been determined that 85% of sucralose is excreted without being absorbed from the intestines, and 15% that passes into the blood is excreted from the kidneys within 1-2 hours without any change. It was concluded that Buddha Sucralose is almost metabolically inert.
For this reason, as long as Sucralose is not heated above 180 C, it does not transform into Chloropropanol, which is a cancer-causing component, and does not contain cancer risk due to its inert structure.
In addition, although it is an artificial synthesis product obtained from two natural compounds, Sucralose was granted GRAS certificate after examining 110 clinical studies from the FDA. In the SFC (Scientific Food Committee in Europe) within EFSA, in 2000, it was confirmed in the light of evidence that Sucralose did not have any negative effects on reproduction, pregnancy and immune system.
In 2011, EFSA "European Food Health Authority" also stated that Sucralose has no harmful effects on dental health.
